Not the one just posted. The one 3 weeks or so ago faking me as
'virginia-bitch' that started all the silly 'joan is dead' bit. Almost
everyone caught on right away to the weak fake.

2 slices white bread torn to small pieces slightly moistened
1/4 cup ketchup
1 large onion diced
1 egg beaten

sauce;
3 29oz cans tomato puree

combine ball ingredients and let sit in fridge a few hours. yields
20 one and one half inch meatballs. place meatballs in a baking pan
just large enough for the whole batch and cover them with the
tomato puree. smoke heavy with hickory at a moderate temperature.

for two people, we freeze them four in a package in divide the
sauce evenly amongst them. after sampling for dinner of course.

i can buy really good locally made Italian style meatballs.

I prefer pork meatballs, browned and not simmered in tomato gravy, more
like a sour cream sauce. Hmmm, sounds like Swedish meatballs.

I prefer pork meatballs, browned and not simmered in tomato gravy, more like
a sour cream sauce. Hmmm, sounds like Swedish meatballs.

Not at all. Swedish meatballs consist of a pork/beef mix, not all pork.
Swedish meatballs are also _not_ eaten with sour cream sauce, that would
be more of a eastern european tradition.

With the meatballs, traditionally, you eat mashed potatoes, lingonberry
jam, and some kind of pickled cucumber

Oh, and the ratio of the beef/pork varies by family. Some also add
breadcrumbs, eggs and other stuff to the mix.

we like the simple taste of no added seasonings. the fat from the
from the meat, the sodium from the crackers, the sweetness from
the onion, plain tomato sauce and hickory smoke really works for us.
IIRC the recipe calls for ketchup. Do you use plain tomato sauce
instead?
yes. i used a few ounce of tomato paste thinned with a bit of
vinegar.
