I used a pan I'd fried burgers in the night before. It had sat covered
overnight on the stove. I heated it and poured off the grease, then I
scraped the pan, leaving in all the salty, peppery, meaty residue. I
added cut of poblano chile, and sauteed it pretty hot, eventually adding
a hamburger patty. After I removed the burger, I deglazed with water
with a little bloomed gelatin. My gosh it was good. Poblanos with
burger fond is going to happen again.

Good stuff! There's some weird green stuff there, but that can be removed
I guess. ;)

We always do that with our cast iron, the favorite pan lives on the
stove top. I don't bother covering it, just reheat the pan tomorrow,
scrap anything solid, then cook today's meal.
