I thought some might find this simple. I adore spices, Don is not
tolerating hot ones well. He'll be fine with this!

From Savory Spice Shop

Although it doesn't list as a specific for Tomatoes, trust me, works
really nicely with them.

Basmati Rice
2/3 cup dry Basmati
1 1/3 cup water (scant 2tsp)

1 can Diced tomatoes
1/2 TB Mt Olymous Greek Seasoning

Hawaiian Red Cooked Pork for garnish (about 2.5 ounces each0

Add seasoning to tomatoes and heat to simmer. Remove from heat and
drop in leftover Red cooked pork to warm.

Top rice with tomato mix and pork.

To serve with: 2/3 cup each, steamed baby Bok Choy (rinse leaves
separately as sometimes they can be sandy). Butter at the side for the
Bok Choy.

We'll have fresh cherries for dessert.

Hope your's goes as well! Prep: less than 5 minutes. Cook, 5-6
minutes to heat tomatoes and about 20 for my ricemaker (start it
earlier and let the 'keep warm' take over).
