A simple grilled cheese sandwich. Two kinds of cheese, medium cheddar
and Swiss on whole wheat bread. That and a handful of potato chips will
do nicely.

I have to thank Joan again for reminding me about the Hambeens (brand)
15 bean dried soup mix. I bought another bag of it and have a pound of
diced smoked ham. I'll be making another pot of that in the crock pot
tomorrow. It was great the last time I made it so I have no doubt it
will be just as good this time. And yes, I'll be baking a skillet of
cornbread to go with it. :)

We had pizza because I had have a ball of cheese and half a jar of sauce
leftover from the last one. I got an early start on the dough and stuck
in into the oven with the light on for a while and had planned to take
it out after about an hour and put it in the fridge. I forgot. When I
remembered to take it out it had already risen way too much. I pushed
it down and stuck it in the fridge for a couple hours longer. When I
took it out of the fridge and started forming thee crust it had a nice
texture. The pizza turned out really nicely. I guess when I fell I
landed on my feet.

Punching down the dough again and refrigerating it obviously helped.
Glad it worked out for you. :) I am not really a fan of pizza. Yes,
I've made pizza dough from scratch (both thin and thick crust) but it's
not something I want to eat very often.

I had pizza twice today. At lunch, my son and DIL came over with a
pizza from Papa John's. They left the rest so i had a couple of slices
for dinner.

That grill cheese would have been great with a bowl of hot steamy lucious
tomato soup!

The ham will be great in those beans! I don't know when
you add meat to the beans, but I'd toss that package in
when I start the beans to give them great flavor and the
ham will be super tender.

Yes, last time I added the ham to the pot at the start and will do so
again. The meat practically melds into the soup and imparts a lot of
flavor. So I'll do that again.

I remember buying a bag of Hambeens 15-bean soup about 30 years ago and
it was good. But for some reason I never bought it again until this
year, after you had mentioned it a few times. I'm still wondering why I
waited so long to buy it again, because it's so very easy and so very
tasty! I cook it in the crock pot. Turned out beautifully the last time
so I'll cook it that way again. And before anyone (Mike?) gets anxious,
no, I do not turn on the crock pot and leave it unattended for hours.
No worries about catching the house on fire. :)

Normally you take good pictures, but this time you were so hungry you
couldn't keep the camera still!

Hit enter too soon.

Dinner tonight is chicken salad with last of the rotisserie chicken.,
done on toast (finally got motivated to make more bread). Sided to it
is a quick vegetarian soup which will keep in the crockpot or if we
lose power, in a dutch oven by the fireplace. Don calls this one 'snow
soup'.

28oz can diced tomatoes
16oz can crushed tomatoes
1 can white corn
1 can black beans
1 can mixed vegetables
32oz vegetable broth (last of my batch)
1/2 tsp Peruvian Chile Lime seasoning
1/2 tsp black pepper

No cans are drained or rinsed but all are low or no salt added.

Alternative version is to use Thyme and Basil instead of the Chile Lime
blend.

I do bean pots all the time and if it helps, here's some of my tricks
(use only what appeals to you):

1- Add chicken broth powder (Knorrs and a host of Asian ones you see
David and I post about. Less salty than bullion cubes)

2- Add Pork broth powder (I'm happy with a Korean one that is basically
Pho broth and similar to 'It's Better than Bullion' which is cheapest
at Target if there is one near you). Comes in several types

3- Most benefit from thin sliced garlic cloves, how much is up to you
but it gets very mild over long cooking so 5-6 cloves isn't outrageous.
The garlic will slowly become like roasted garlic butter from those
little wet ceramic pots.

4- Black pepper often enhances them. I tend to 1/2 TB but then we like
black pepper.

5- Rarely done but works well when I think of it, diced tomatoes-
28-32oz can. Cento and Miur Glenn brands excel for this spot if you
see them.

6- Try using vegetable broth for part or all the water. Even just some
leftover V8 or tomato juice can be a nice variation.

7- Many people like the combination of Basil and Thyme which especially
compliment tomato based beans.

8- Small amounts of Calamansi powder if you have it (not likely) but
can substitute about 1/2 tsp lime juice (then taste test)- if unsure,
pull 1/2 cup 'liquid' from crockpot then try 4 drops lime juice and see
if you like it. We do but I've not seen it in any recipe books, only
in a dish in Subic bay. Filipenos use a lot of Calamansi much like you
would use Lemon to 'brighten' a seafood dish. It tastes like a cross
between lemon and lime.

Hopefully something there may spark interest!
