Nailed it! My wife wanted to make buttermilk biscuits, because her

The combo seemed obvious. I oversalted the gravy a bit, but we don't
hate salt.
I've had biscuits and bacon gravy and biscuits and sausage gravy.
This was my first pork chops with biscuits and gravy. They went well
together. A picture of the complete meal would have been another gravy
swamp. :)

It has come to my attention that people on the mainland like to have
some greenery on their plates. Da Hawaiians like to put shredded cabbage
under fried foods like chicken katsu to absorb the oil. I suppose that
some people will actually eat the cabbage but I never do. Who the heck
wants limp, oily, shredded cabbage?

It appears that one Hawaiian plate lunch joint on the mainland will put
steamed vegetables under their chicken katsu - the idea being that
you're supposed to eat it. That's quite clever - hiding the greens under
the katsu to preserve the aesthetics of the Hawaiian plate lunch. It's a
good idea not to put it on the side, that would draw too much attention
to itself.

This is one of the rare occasions where we had no vegetable side. The
finished product was spare and white with black sprinkles. ;)

It has come to my attention that people on the mainland like to have
some greenery on their plates. Da Hawaiians like to put shredded cabbage
under fried foods like chicken katsu to absorb the oil. I suppose that
some people will actually eat the cabbage but I never do. Who the heck
wants limp, oily, shredded cabbage?
I do, seriously.

It still has some snap and any remnant teriyaki or meaty oil is always
welcome, lol...

It appears that one Hawaiian plate lunch joint on the mainland will put
steamed vegetables under their chicken katsu - the idea being that
you're supposed to eat it. That's quite clever - hiding the greens under
the katsu to preserve the aesthetics of the Hawaiian plate lunch. It's a
good idea not to put it on the side, that would draw too much attention
to itself.
