We had a change of plans. I had bought some steaks for supper tonight
and we had been planning to take my son and his wife out for dinner
because it is his birthday. A lot of the good restaurants here are closed
on Mondays and his gluten free options were limited, so he decided they
should come here for a steak dinner. I had to go out for some more
steaks and to get something for tonight. I grabbed some chicken breast.
I was going to leave it to my wife to decide what to do with the
chicken. She decided to chop it up and do it skewers, so that involve
marinating it and putting the responsibility back on me.  I blanched
some onion, red pepper, green pepper and onion  and assembled the
skewers. When it came time to cook them she took over. She also made a
nice salad.
The skewered meat and vegetables turned out beautifully.
So dinner tonight was marinated skewered chicken & vegetables? Saving
the steak for tomorrow? (Many restaurants around here are closed on
Mondays, too.)

It is quite common for the better restaurants around here to close on
Mondays. It has been a problem for us for birthdays, anniversaries etc.
The bakeries around here close on Mondays too.

I wonder if it's due to some ancient asian taboo or superstition. Maybe
Uncle knows.

Kale/potato mash + sausage is an iconic old school Dutch dish. People
only used the green variety, not the red/Russian or black/Italian.

Finely chopped and sautéed. No idea about the variety.
Older, tougher leaves can be leathery, and often benefit from steaming
(I do a quick steam in the microwave) before being sauteed.
I prefer to pick young, tender leaves - a very different taste and
texture experience!

You should saute it in lots of coconut oil. That makes it a lot easier
to slide it out of the pan into the garbage.
