One of the item I picked up at Wild Fork was aged pork chops. Made on
tonight. Started in a cast iron pan, finished to 140 degrees in the
oven. Seasoned with salt, pepper, garlic.

There are three of them, individual packed at $4.98 a pound. Very
tender and tasty. I'll get them again next trip.

I was thinking I'd get two meals out of it, but it was so good, I
finished it.

Are they as thick as they look in the picture?
What did you have as sides dishes with this piggy?
It is 1 3/4" thick. I had though about slicing it in half but it cooked
up well.

Sides was leftover mashed potatoes and a salad. And some Pee No Moir
wine.

I thought about grilling too, maybe next time.

Interesting! Aged pork chops? I've never had that before. Was there a big
difference between aged and regular pork chops?
