Dear rfc:ers,

Tonight I had two bacon and egg sandwiches for dinner. They consisted of a
base of my own rye and spelt bread (with walnuts) fried in a frying pan
with garlic.

After that a mix of fried bacon and fried onion.

Top that off with a fried egg, and add some pepper and a few splashes of
tabasco.

This is the first Wendy's I've eaten in at least three
years. I didn't care for it as I'm not fan of cheeseburgers
and certainly not a fan of any burger with that also has
ketchup and pickles on it.

It's been at least that long since I've eaten a McDonald's
hamburger and even longer than Johnny Rockets. When I
last ate at Rocket's, I wasn't overly impressed; it was
a burger is all I can say.

for something anyone can do at home by simply calling it a "smash
burger". Got a hot skillet? Got a spatula? You can make a smash
burger for less than half the cost of having someone flatten it for you.

Thank you for explaining the smash phenomenon! There is a place called
"smashburger" here and I always wondered what it was. Now I know.

I suspect they have to add cheese to mitigate the potential dryness.

As for paying, I think it is due to the time savings. Professional
business men value their time. Yes! They could go home and cook a burger,
but that would negatively affect their work. Instead they choose a quick
stop for a burger on their way to their next business meeting. At least I
do (when I have physical meetings and my day is packed) from time to time.

I tried a black bean burger at Wendys, of all places. I honestly liked
it; Not so much the frozen variety I found at the grocery store.

I've been trying to make a smash burger but that's been elusive so I'm
looking for some new tools: a flat iron weight to flatten the burger and
a thin metal spring steel spatula. I'm also going to have to cook these
burgers on a carbon steel pan because the burgers have to be scraped off
the pan. Smash burgers are actually a new way to cook a hamburger. A
properly made one is just a scrumptious, sensual, experience.

Hehehe! I wasn't the only one to tell him cast iron was his answer.
Specifically the heat retention will come into play and cook both sides
at the same time while pressing it down.

Two pans doesn't make much sense to me. OTOH, cooking both sides of a
steak is an awesome thing. I used to have a contact grill that I loved -
it could cook a steak very fast with no grease splatter. It was a
beautiful thing. OTOH, I can cook up a steak pretty fast with my current
setup and it's going to look better than frying with a couple of cast
iron pans. That's just so ridiculous.

And no extra stuff to get that you don't already have in my case. I
have an 11 inch, a 9 inch and a 7 inch plus 2 cast iron dutch ovens
(fireplace or stove top or oven, all of them.)

Inherited 2 of them and bought the others.

You're right about that. Most people don't smash their burger enough to
make a proper smash burger - that includes me. You have to smash it so
thinly that you're going to have to scrape it off the pan. I'm going to
have to use my carbon steel pan for that. I used to love my carbon steel
pan to death but have moved on. To make a smash burger, I'm going to
have to search for that pan. It's still an awesome pan.

You're right about that. Most people don't smash their burger enough to

no thanks! i like the juice left in the burger. i
also don't cook it so much that it doesn't have any

few $. better than spending $ out, plus we know that
nothing has been added to the ground beef. our normal
addition after the burgers are done is to have mushroom
with them. they don't need any other condiments most
of the time we don't use any. sprinkled with garlic
salt to start and that is perfect for both of us and
a dab of butter on the pan.

Hey there Melodious Avian. I tried a new one a few
days ago (Lion's Beard).

Taste is impossible to describe accurately by text.
The texture is a bit like really thick enoki.

Tomorrow I will cook some separate from the bell
& vidalia I usually mix with mushrooms as a side for
bacon & eggs, so I will report again tomorrow.

Some interesting facts on the Internet though;
apparently it should improve my brain function.

also don't cook it so much that it doesn't have any
juice left in it.

I disagree. There is a kitchen tool called a cast iron burger press,
which makes more sense than using two cast iron skillets of differing
size. You could also use an old style cast iron bacon press to
accomplish the same result. That is, if you're planning to do this often.

That bacon press thing is good for holding down some
meats that like to curl up when frying even though
the edges have a slight snip in them. Fried bologna
is notorious for curling up no matter what you do to
it. That bacon press will hold it flat.

Whataburger was super unimpressive, and I even gave them
a second chance just in case it was an off day for them
or me.
Nothing beats a home-cooked burger except convenience. You can cook it
to the size and doneness that you desire.

This is the first Wendy's I've eaten in at least three
years.  I didn't care for it as I'm not fan of cheeseburgers
and certainly not a fan of any burger with that also has
ketchup and pickles on it.
It's been at least that long since I've eaten a McDonald's
hamburger and even longer than Johnny Rockets.  When I
last ate at Rocket's, I wasn't overly impressed; it was
a burger is all I can say.
They're all probably now worse than you remember. Most of the burger joints
have really gone down over the last 20 years.
Ahh... you say _most_, that means that perhaps there is another Skywalker?

can ask them to leave off the ketchup or pickles.

You can even tell them you want it 'plain' for
your dog or child. But be careful exactly

that way once at McDonald's, and they left off

I had a barbecue sandwich before the power went off

source from the contaminated raw onions used on Quarter Pounders.

Dear rfc:ers,
Tonight I had two bacon and egg sandwiches for dinner. They consisted
of a base of my own rye and spelt bread (with walnuts) fried in a
frying pan with garlic.
After that a mix of fried bacon and fried onion.
Top that off with a fried egg, and add some pepper and a few splashes
of tabasco.
Divine!
Sounds good!
Yes, it's a nice combo. I really enjoy tabasco on my eggs, adds a nice
little "sting" to the dish. =)

The green has a flavor all its own, and it is good.
Ohhh... interesting! I do like regular Sriracha. I'll keep my eyes open in
the supermarket and if this is new in the US, I imagine that it will reach
europe in 2 years or so. ;)

It is a recent phenomenon, but it has even made it to grocery store
branding as well.

I like to put Tabasco on eggs over-easy. I had eggs this morning. Not
cooked one way but two ways. Two!
