Had a desire for raisin bread. Broke out my tried and true recipe
from web and viola - raisin bread.
Loading Image...

Original recipe -
https://www.breadmachinediva.com/raisin-bread/

Don't want a 2 pound loaf, so I make a down sized 1 pound loaf, as
follows.

RAISIN BREAD
1 pound loaf bakers %
water 178 grams 69.8
olive oil 1 TBSP
sugar 1.5 TBSP
salt 0.75 tsp
bread flour 255 grams 100
powdered milk 1 TBSP
cinnamon 0.5 tsp
raisins 80 grams 31.4
yeast 1 tsp

The kitchen smells wonderful. Haven't cut a slice yet.
May post a followup pic tomorrow - or not.

Thanks for posting an easily scalable recipe! I might try this when
I next bake (Several sourdough loaves in the freezer).

Here's another take.

MMMMM----- Recipe via Meal-Master (tm) v8.05

Title: Raisin-Rum loaf, xxcarol favorite
Categories: Xxcarol, Breadmaker
Yield: 12 Servings

1/2 c Sour cream
1/3 c Water
1 ea Egg
3 tb Dark rum
2 ts Butter
1 ts Vanilla powder
3 c Flour
3 tb Sugar
3/4 ts Salt
1 1/2 ts Yeast
1/2 c Dark raisins

Oh this is good! It's a 1.5lb loaf set to white bread. It comes out
a brown color as if it was a wheat bread and it's quite sweet like a
dessert bread.

Needs nothing to accompany it, just slice and eat!

From one of my breadmaker books, with powdered vanilla added by
xxcarol

From the VB kitchen of xxcarol, 16JAN2008

MMMMM

Sliced the loaf today. The picture doesn't measure up to the taste.

Thanks. Appreciated a different recipe for raisin bread. But that
will require buying some items I don't normally have on hand.

I am sure that loaf of home made raisin bread would be great but it
would be wasted effort here. I like raisin bread only very occasionally.
There are a couple Dutch operated produce stores nearby and they
almost always have good raisin bread for sale.

I always like it but most commercial is rather mediocre. There was one
that is fantastic, but no longer available. Oregon Trail. Loaded with
raisins, it is a hefty loaf. No idea whey it is no longer produced and
I've checked a few sources.

Agreed about most of the commercial stuff being mediocre, but the stuff
they sell in the Dutch stores is pretty damned good. It sounds like the
Oregon trail, loaded with raisins. The loaves aren't very big but that's
okay because I only want it occasionally.

Maybe they ran out of whey.

It's a staple in the Netherlands. Sliced or in roll form.

Thanks Master. I'm sure it provides an exquisite aroma after it's
digested. Can you smell each raisin, or is it just a barrage of
olfactory orgasm?

Well you can use regular liquid vanilla. The rum is the only odd one.
Should be an airplane sized dark spicy like Captain Morgans (grin, if
you don't drink it, it would be cheaper and last for several loaves).
