We did the pork grinding yesterday then I made bratwurst.

Grind the pork with crushed ice (I borrowed a cup from a neighbor with
a crushed ice thing on her fridge door).

Add seasonings and work in well, second grind worked here as first
grind was 'fat disc' so used medium disc after mixing pretty well with
spice list.

For the Spice Mixture:
1 1/2 tablespoons salt
1/4 cup dried milk powder
1 1/2 teaspoons freshly ground white pepper
3/4 teaspoon freshly ground black pepper
1 teaspoon ground mace (can substitute nutmeg but strongly recommend
mace for traditional German flavor)
1 teaspoon ground ginger
1 teaspoon dried marjoram
3/4 teaspoon mustard powder
1/4 teaspoon ground cardamom
1/4 teaspoon ground coriander
1/4 teaspoon crushed caraway seeds

These can go in casings and traditionally are but I skipped that and
instead flattened it out then made strips and pinched off enough to
make balls.

fry pan.

Excellent! I forgot to add a pic of the first 1/2lb of it in use.

Recipe is of that. I chose not to case it as I don't have any casings
for it right now. As it is, it was turned into raw bratwurst and
rolled to balls to cook in the soup.

You're on that light diet. As soon as it’s light you start eating.
