Sunday "Brunch" - Spinach & Feta Quiche

I just assembled and put a spinach & feta quiche in the oven. I love
this recipe and have used it many times over the years but haven't made
in a while.

In a nutshell, the filling consisits of four large eggs seasoned with
S&P, beaten in a large mixing bowl. Whisk in 1 cup milk, 1/2 c. heavy
cream. 8.5 oz. of crumbled feta cheese. Stir in 10 oz. frozen spinach,
well drained. (I buy the small frozen blocks, thaw and use a collapsible
vegetable steamer to squeeze out the excess water.) I use a fork to
whisk it all together. Using an actual wire whisk, well, the spinach
gets all clogged up in it. A fork simply works better. Pour the
mixture into a deep dish pie crust. (I buy frozen deep dish pie crust
because I cannot make a crust to save my life but if you can make a good
crust, go for it. No need to par-bake the frozen crust.) Sprinkle the
top of the quiche with about 1 Tbs. grated Parmesan cheese and grated
nutmeg (to taste). Bake at 375°F for 30-45 minutes until the filling is
well set and a knife inserted in the center comes out clean.

This quiche is always delicious! Reheats very well in the microwave, too.

That sounds pretty good. Egg and spinach is a great combination. One of
our favourites here is scrambled eggs and spinach. Heat up the pan and
beat the eggs. Add some of your favourite hot sauce to taste. I use a
Trinidadian hot sauce. It's not too hot but has good flavour. Remove the
stems from some spinach. If it is baby spinach it can be cooked whole
and if it is larger leaves they should be chopped up a bit. Melt some
butter in a fry pan and let it brown a bit. Toss in the spinach to wilt
for about 10 seconds and then add the eggs and stir. IMO this is one
that calls for wet scrambled.
