Nothing wrong with that grill, but those charred steaks. 😫
Can't you move them away from the flames or at least
remove them from the grill until the fire dies down?
They *are* burned. I alternate letting the flames go apeshit with
capping the fire. Since I use wood, when I do, the smoke is dense with
aromatics. I think that Krogers in your area carry Certified Angus.
Whatever Wertz says, CAB Choice *is* better than typical Choice. We had
lovely steaks tonight, if a little overdone. My wife's was slightly
over medium. She gets the tenderloin cut out of the Porterhouse, and I
get the rest. Mine was just under medium, when I'd have preferred MR,
but they were still excellent, cooked over peach and apple woods from
trees that died and were left standing to season. I typically do use
briquets as a base, but then put wood over the top.
Another thing. I thought there was little to no point in Waygu *ground*
beef. What difference should marbling make if it's getting ground
anyway? I was wrong. Occasionally, ALDI has it for $4.99/# in their
ad, but you have to get it on Wednesday (the first day of the ad), or
not much after that, because it sells out quickly. They were sold out by
Thursday afternoon. The texture is way better than other ground beef.
Pattied thin and seared on a very hot pan to medium well, it really is
something special, though I haven't tried it on a wood fire.
