Since a good part of North America is in a deep freeze,
what will you be dishing up tonight? Or will you be
brave enough to venture out for your evening meal or
will it be something delivered?

Tonight's fare will be cabbage cooked with lots of end
pieces and trimmings from hams. I found these packages
at Walmart last year and they're extremely good. Most
of the pieces are much larger than a large book of
matches and yes, I do have to do a bit of chopping to
get them into generous bite size pieces. For cabbage,
to me, these trimmings are even better than cubed ham.

red potatoes thrown into the pot to round out the meal.
Plus, a small skillet of cornbread.

BUT, I just received my Walmart delivery, and with kielbasa, kraut, red
potates, etc...

Tomorrow I'll be making a big crock of creamy tater/kraut/kielbasa
soup... I throw in onions, carrots, celery, and LOTSA garlic... evap
milk provides the creaminess... will be served with some cheddar cheeze
garnish and rye bread...

We used to have a snowy owl that wintered nearby. I was used to seeing
one occasionally but this one took up residence. It has started off as
vacant farm land but then the city expanded and they built the new
hospital. This guy spent a lot of time on the ground between a road and
the building site and there were always dozens of birders hanging out
watching it and snapping photos. I don't know what happened to the owl
but no one has seen it for a few years now.

Sounds similar to here and snow due Friday/Saturday. Stores are
getting clobbered as people panic. We made a super fast trip too but
it's our normal shopping day.

2 18packs of eggs (normal, we eat a lot of eggs), 1 Kayem sausage and 1
Kayem hot dog pack, sugar, 5lbs flour, and birdseed as the birds have
been insane. I've had lines of Cardinals and Bluebirds waiting their
turn and mine feeds 6 at once! Stray other birds too.

That sounds delicious! I meant to buy a cabbage when I was at the store
last week but I neglected to add it to my list so I completely forgot
about it. I have some diced cubed ham in the freezer that would work
beautifully with a dish like that. And it's been a while since I made a
skillet of cornbread.

Last night was a 1/4 lb. ground chuck burger on a lightly toasted sesame
seed bun. The burger was seasoned with S&P and a sprinkling of garlic
powder, cooked in a small cast iron skillet to just shy of medium-rare
with a splash of Worcestershire sauce. Topped with a slice of medium
cheddar cheese.

Tonight's fare will be cabbage cooked with lots of end
pieces and trimmings from hams.  I found these packages
at Walmart last year and they're extremely good.  Most
of the pieces are much larger than a large book of
matches and yes, I do have to do a bit of chopping to
get them into generous bite size pieces.  For cabbage,
to me, these trimmings are even better than cubed ham.

The cabbage and ham will be joined with small scrubbed
red potatoes thrown into the pot to round out the meal.
Plus, a small skillet of cornbread.
That sounds delicious!  I meant to buy a cabbage when I was at the store
last week but I neglected to add it to my list so I completely forgot
about it.  I have some diced cubed ham in the freezer that would work
beautifully with a dish like that.  And it's been a while since I made a
skillet of cornbread.
Last night was a 1/4 lb. ground chuck burger on a lightly toasted sesame
seed bun.  The burger was seasoned with S&P and a sprinkling of garlic
powder, cooked in a small cast iron skillet to just shy of medium-rare
with a splash of Worcestershire sauce.  Topped with a slice of medium
cheddar cheese.

rolls. There is however, some panko in the filling. It's better that

David? Curious on what you have inside the cabbage leaves? I can
guess at all sorts of things but I don't know. Ones I have had were:
Fish paste with Shishito peppers, ground chicken sausage, or ground
beef and tomatoes. Unsure what else might be mixed with those 3. I
found them in Hawaii and Japan. Often using the thinner Nappa
'Chinese' leaves for wrapping as it's easier but done in 2 or 3 layers
as it's easy to rip if you don't.

When they used the Chinese cabbage, it was dipped in a water/corn
starch slurry to help it 'glue together' a bit. I tried that but I
think my slurry was too thin as they fell apart easy.

My son served a nice side salad the other day; peel
and grate raw beetroot and raw carrot. Keep them separate
until just before serving; then mix together with French
dressing and scatter some chopped spring onions on top.

I once made my wife a salad that she liked enough that she late made it
herself. It involved Bibb lettuce, roasted beets, blue cheese, walnuts
(omitted the nuts) and a lemon juice and olive oil dressing.

Borscht is excellent.
My grandmother used to make it but we never did.
Now that you mention it, cannot remember the last time I had it. Many

Thanks! I'd not seen you picture them before. I like beets if not
pickled or pickled and sweetened (don't appeal to me).

One of the things I'm planting this upcomming year is 'watermelon
radish'.

Tonight's fare will be cabbage cooked with lots of end
pieces and trimmings from hams.  I found these packages
at Walmart last year and they're extremely good.  Most
of the pieces are much larger than a large book of
matches and yes, I do have to do a bit of chopping to
get them into generous bite size pieces.  For cabbage,
to me, these trimmings are even better than cubed ham.

Boy, that sounds good. All we had was frozen pierogi. Instead of the
normal boil/skillet sautee, I baked them in the oven with butter,
turning halfway through. They came out OK.

My last attempt at homemade pierogi didn't go well. I made a basic egg
pasta of flour, salt, eggs, but they came out too very chewy and
unappealing. Perhaps I should have added shortening to the dough.

That would be pie crust.

Something more like this:

4.5 cups all-purpose flour
2 teaspoons salt
2 cups sour cream
2 large eggs
1 egg yolk
2 tablespoons butter, melted
2 tablespoons vegetable oil

Stir flour and salt together in a large bowl. Whisk sour cream, eggs,
egg yolk, butter, and oil in a separate bowl. Stir wet ingredients into
flour until well blended and dough comes together. Cover the bowl with a
towel, and let stand for 15 to 20 minutes.

Some of you should come and help my neighbour when she is preparing for
one of her family parties. It is a huge family. She has 13 brothers and
sisters and they all have their spouses, kids, and grandchildren. It is
like a production line, and the perogies are incredible.

I'm not any good at noodles, my only attempt having been for fun where
I made Udon. I think your instinct sounds spot on though.

I did look it up and apparently they are better done eggless (not tough
and chewy) but do add fats.

Since you apparently like apple sauce you should try the stuff they sell
at Costco. They sell boxes of small tubes, each enough for a serving for
one or as a condiment for 2-3 people. It is much thicker, tastier and
less sweet that the stuff that comes in serving size tubs.
