A strip of side bacon, a piece of peameal bacon and some pancakes with
maple syrup. I am slowly giving in to the concept of pancake mix. I
picked some up a month or so ago and have found myself supplementing the
odd bacon and egg meal with some pancakes that are unbelievably easy to
make. These are not even a premium brand. I had looked for the Krusteas
that Ed had recommended but there were not available in the local
grocery stores. However, I have since located Krusteas as Costco. I am
not sure if I am ready to plunge deep enough into pancake mix to go with
that super volume of product but.... maybe.

Here's my breakfast this morning. I think we can safely say that it
looks horrible and that I'm losing my touch. I'm nearing the end of my
days of cooking.

I am not in the mood to argue. It does look pretty bad. ;-)

I have to admit that I am not a huge fan of eggs. I have them a couple
times a week but I am critical of my own results. I like the yolks to be
very runny and I really dislike either the whites or the yolks turning
brown.

I've been trying to use a silicone egg mold to make fried eggs. That was
such a fail. I can make an okay omelette but I need to make something
new and exciting for breakfast. Maybe I'll just make pancakes.

The same holds for scrambled eggs - curds gently turned over on a low heat:

That!

Proper slightly runny egg curds, and you're right, leaving them in the
pan to find their mottled way is far prettier than consistently yellow eggs.

Main gripe on restaurant food - overcooked eggs!

Scrambled eggs are great. I like to crack the eggs in the pan and then
break up the yolks as it's cooking. I'm going to have to make me some
tomorrow!

That!
Proper slightly runny egg curds, and you're right, leaving them in the
pan to find their mottled way is far prettier than consistently yellow eggs.
Main gripe on restaurant food - overcooked eggs!

Pepin's version looks like a warm mess in the pan, then folds into
perfection.

Far too many people are afraid of soft eggs.
Indeed it's tough to find a cook that will make eggs the way I want
them.

Now there's an eyeball egg you won't find at the Waffle House.

Flat top cooking is a lot friendlier to bacon and taters than it is eggs.

No yellow squash makes up for a multitude of sins.
Here's a lunch with squash. I don't really care for squash but this is
kabocha tempura. It's the moon shaped thing on the left. I always try to
grab it when I see it.

Luna tempura exclusion noted and granted!
Breakfast this morning was a cheese omelet and toast. I wanted to get
'er done fast so I fried the bread.

A lovely properly cooked omelet, which is to say not as hard as a gas
station burrito!

This is the truth! I'd rather have them runny than hard.

And the venerable soft-boiled egg in shell, a total treat!
