Saw a commercial for this stuff so thought I'd check it out.

They have a line of cast iron, similar in size to Lodge, but instead $20
is is $110 or so. $240 for larger sizes.

https://smithey.com/pages/our-story

The No. 8 skillet is nice size for two eggs. I have a Teflon coated pau
for at least 10 years that was cheap, just not sure why I'd replace it
for a cast iron for $110.

https://smithey.com/collections/skillets/products/no-8-cast-iron-chef-skillet

Looks like good stuff, but at this stage of my life, I just cannot
justify spendig the money to replace what is already working.

Not too much more than you pay for a steak though.

If you are still getting your pension checks every month, just wait till
that check comes and buy your skillet.

Or, you could ask your granddaughter to buy it for you, if you can't wait.

That's a lot of money for something that will crush
your toe if you drop it the same as a $20 cast iron
skillet would.

Watching the commercial, they showed a fried egg in the pan sliding
around like it was Teflon coated. That caught my attention.

A few years back I'd have bought one to try, I just don't have the need
these days,

The great thing about cast iron pans is that they could last longer than
you will. Well, that's about it folks. Cast iron pans served the
Americans well when the West was being won but there's really no place
for it in modern cookery. I could use it to make a batch of old timey
cornbread, but I don't know if I brung me any.

Are you sure? I find them very versatile. Not only for cooking, but also
as a weapon, as a training device (dumbbells are for nerds!), as
protection against bullets, among other things.

I'm an old guy with a weak wrist so weight is a problem. Performance is
also a problem. Cooking with cast iron is like driving an old VW with an
air cooled engine. The modern cook demands better performance! OTOH,
protection against bullets is always a good thing.

Oh? Whose rule was that. I remember that Gary said that we would talk
about Julie if she left. When she finally pulled out he found that he
was wrong so he occasionally tried trolling the group by mentioning
here. All he got for his efforts were comments about his lame attempt at
trolling. Bruce has a hissy fit about me commenting about him after I
filtered him. He said that I was talking about him behind his back. Then
it was pointed out that since he did not filter me there was nothing to
stop him from seeing my posts I was not talking behind his. He OTOH,
commenting about me when he knows I had him filtered would be talking
about me behind my back. It is no surprise that he bleeds hypocrisy with
almost every post.

This "Citizen" person has posted under another troll
name in the past. I don't see his posts because
whoever he was previously I blocked him then and
don't see his posts under this new name. I suppose
every time he morphs into another name, I won't see

I am not sure if it is really funny or really sad that people like that
go to so much effort to make asses of themselves. It's pretty pathetic
to go into a group to be an ass and then have to change your user name
to get past filters knowing that a small success at that will only mean
you will end up filtered under your new name.

"Citizen" is yet another mystery person/nymshifter who popped up
out of the blue to criticize what is posted here.  My filters
blocked it; didn't see it until anyone replied.
Jill
This "Citizen" person has posted under another troll
name in the past.  I don't see his posts because
whoever he was previously I blocked him then and
don't see his posts under this new name.  I suppose
every time he morphs into another name, I won't see
those posts either.

It's sad as if JLA has any innocent 'normal' cooking folks who'd like
to chat cooking, they will have a rough time due to the trolls from
their own site. So far, they are batting 100% troll.

Not really, there are people that post on topic from there, your
problem is you're too trusting, and maybe don't catch on to the
obvious asshats fast enough.

I'm an old guy with a weak wrist so weight is a problem.
Performance is also a problem.
You should email John Kuthe.  He probably has some wrist
exercises as well as performance recommendations.
LOL!

No one left to bully, revive a missing participant.
You going to start back in on Carol next, or was she sufficiently
worshipful of late to avoid another ruler slap on the knuckles?
Mr. K was a big part of some posters' lives, it seems. That's just
nutty as hell.
It is funny that someone would accuse another of being a bully by
bullying them.  Rather lame.

Saw a commercial for this stuff so thought I'd check it out.
They have a line of cast iron, similar in size to Lodge, but instead $20
is is $110 or so. $240 for larger sizes.
https://smithey.com/pages/our-story
The No. 8 skillet is nice size for two eggs. I have a Teflon coated pau
for at least 10 years that was cheap, just not sure why I'd replace it
for a cast iron for $110.
https://smithey.com/collections/skillets/products/no-8-cast-iron-chef-skillet
Looks like good stuff, but at this stage of my life, I just cannot
justify spending the money to replace what is already working.
That's a lot of money for something that will crush
your toe if you drop it the same as a $20 cast iron
skillet would.
That's easily fixed! Steel toe boots to the rescue!
https://www.tractorsupply.com/tsc/catalog/mens-steel-toe-work-boots
The great thing about cast iron pans is that they could last longer than
you will. Well, that's about it folks. Cast iron pans served the
Americans well when the West was being won but there's really no place
for it in modern cookery. I could use it to make a batch of old timey
cornbread, but I don't know if I brung me any.
http://youtu.be/MM_UUB6J-Fw
Are you sure? I find them very versatile. Not only for cooking, but also
as a weapon, as a training device (dumbbells are for nerds!), as
protection against bullets, among other things.
I'm an old guy with a weak wrist so weight is a problem. Performance is
also a problem. Cooking with cast iron is like driving an old VW with an
air cooled engine. The modern cook demands better performance! OTOH,
protection against bullets is always a good thing.

A pan that takes a long time to reach temperature and remains hot after
you turn off the heat source makes no sense at all to me. I suppose it
could work if you have an unreliable heat source like a wood fire or hot
coals. Cast iron would make a lot of sense if you're camping or in the
aftermath of WWIII which, according to the Donald, is imminent. I better
start looking for my CI pan. I ain't dumb!

They're not for a smaller kitchen typically, but they do produce a super

But carbon steel will do it great too, and with a lot less weight.

I don't have any problems with steaks on carbon steel or cast aluminum.
Maybe I'd do okay with cast iron but I haven't used that in years.

is imminent. I better start looking for my CI pan. I ain't dumb!
Thus speaketh ignorance.  Live happily in ignorance David.  You are
determined to.
What is ignorant is giving an opinion on another person's opinion. Do
you have an opinion of your own? You believe yourself oh so superior but
you don't have a thing to say. Give your opinion on the pans, not me.
Give it up David, she burned you and without even using
a cast iron pan.
You are a classic sucker punch troll when the fight is on.

A pan that takes a long time to reach temperature and remains
hot after you turn off the heat source makes no sense at all to
me. I suppose it could work if you have an unreliable heat
source like a wood fire or hot coals. Cast iron would make a
lot of sense if you're camping or in the aftermath of WWIII
which, according to the Donald, is imminent. I better start
looking for my CI pan. I ain't dumb!

Of course I used one when I was younger. Everybody did. I can't imagine
what you must think cooking was like back in the 60's. I don't dream up
things ad hoc. My guess is that you have trouble with what you believe

How is it anyone is so weak of self that they can't exist knowing their
preferences in pans or foods varies amongst other participants?

That's early life juvenility, like grade school mode - but dished out by

So much for wisdom coming with age.

Old folks iz the craziest people. They think desktop Windows is the
besttest OS/PC in the world. It's not surprising that they still cook
with cast iron.
I want to cook food magnetically suspended in air with lasers capable of
reaching 1000 degrees in 1.5 seconds. That said, my guess is that cast
iron will get a bump in popularity by the younger generation who are
looking for something new and yet retro. That's fine. Young folks should
try new things.

Back in the 70's and 80's, I bought cars with manual transmissions. I
had a son at the time. By the time I had another son and then a
daughter, you could pretty much kiss that setup goodbye. Been there,
done that.

My daughter's ex wanted to give her his car with a 6sp manual. I spent
some time teaching my daughter how to drive manual. In the end, we
decided that it wasn't worth the hassle so we passed. My daughter's ex
is into manual though. He drives a new GTI. Whoa baby...

Wow, I wasn't expecting that from you, Carol! Cast iron isn't
everyone's cup of tea, but my 8-inch cast iron skillet is a must-have
for baking a "skillet" of cornbread. Oh, and the cast iron cornstick
pans are fun. :)

Ditto the porcelainized cast iron pots with lids (Descoware) one of
which I use to make chili. And a large Descoware skillet with a lid
which is great for slow simmering spaghetti sauce.

https://en.wikipedia.org/wiki/Descoware

Allegedly, Julia Child loved Descoware.

Oh, and yes, you can use any of it to cook on a grill over coals in case
of an extended power outage. Handy stuff!

A pan that takes a long time to reach temperature and remains hot
after you turn off the heat source makes no sense at all to me. I
suppose it could work if you have an unreliable heat source like a
wood fire or hot coals. Cast iron would make a lot of sense if
you're camping or in the aftermath of WWIII which, according to
the Donald, is imminent. I better start looking for my CI pan. I

Oh, and yes, you can use any of it to cook on a grill over coals in
case of an extended power outage. Handy stuff!
Jill
Umm, Jill I've posted so many times on my cast iron pans including
cooking for fun in the fireplace here. Mine gets used 3-4 times a week
though less for the cast iron ovens due to being hard for me to lift
now.

I had not bothered to engage him on that. There are things I like about
cast iron. Among them are being able to get them smoking hot that they
retain heat. They don't suddenly cool off when you through a slab of
meat in. The cast iron is my pan of choice for pancakes.

Sometimes you need cookware that will retain the heat after you move it
off the burner. Or something that can go from stovetop into the oven.
There's a reason cast iron has been around for so long.

Clad stainless steel. I can put it in the dishwasher. I never seem
to need anything that retains heat after moving it off the burner.

I have some cast iron frying pans. There were relegated to the
basement a few years ago.

Cheap too! At least the Lodge and similar. There seems to be a couple
of brand that have very high prices. I'm curious how well they work and
what makes them so costly. My curiosity stops at much lower that $200
though.

I learned today that Smithey will recondition cast iron frying pans.

Other places will do it, too. If a cast iron pan has been very badly
mistreated and has sentimental value, the $40 might be worth it.

The heat conduction of cast iron pans are not mysterious, nor are pans
rocket science. Cast iron is a poor conductor of heat. This means that I
can be cooking a steak or eggs while you're wasting your life waiting
for your pan to get hot enough to do anything. My time is too precious
to throw it away on a frying pan. A pan that can reach working
temperature in seconds is worth its weight in gold.

What makes cast iron a good material for frying pans is that, despite
taking longer to heat up and to heat evenly, it will retain that heat
when you slap some meat into it. It is going to stay hot and give you a
good sear instead of cooling off.

Keep the heat u on any steel pan and have the same result, with less weight.

Aluminum's excellent heat conductivity means that it can supply all the
heat that a steak is going to need to sear. I'm not saying that you'll
be able to sear a steak like I can because I suspect that a lot depends
on the pan and the heat source. My setup can reach 430 degrees in 60
seconds. It's amazing to see.

Once again, it's YOU who is demonstrating the animus and attack mode.

David spoke his truth, it need not be seen as some breach of your
preferences in pans, true?

But this is a place where the old farts denigrate anyone not farting on
their side of the ship.

Sad.

OTOH,
protection against bullets is always a good thing.

that you will get a lot of beautiful women who will be impressed by the
110$ skillet!
