Planning on a Kentucky Derby Day (5/5/12) party and looking to find a
recipe for the traditional Merts Louies Derby Day cake.

I've tried FN (thanks) and google which just point to shows which show
case the Merts cake on shows, sans recipes.

Any one have a recipe?

Merts is who makes or allegedly makes the cakes for Churchill Downs. I
don't know, don't really care...

I see someone got up on the wrong side of the bed! If you don't care
about Derby Day, why bother posting to this thread? Have you been taking
negativity lessons from Jill?

Regarding the Merts recipe for Louie's Derby Cake, the actual recipe is
a secret, but it's described as a "fusion of moist butter praline cake,
dark chocolate and fine Kentucky bourbon". The picture on mertscakes.com
shows that it may be a four-layer bourbon-soaked pecan praline cake with
chocolate ganache filling between the layers and what looks like thin
royal icing.

So I'd start out by making two thick layers of praline cake[1]. Cut each
layer in half crosswise to make four layers. Using a pastry brush, put
bourbon over each of the cut sides. Make ganache and assemble cake
layers with ganache between the layers. Make thin white frosting and
cover cake with it.

Those cakes are gooood, but I won't pay $29.99 for a liitle bitty 6
inch cake. I always wait until Kroger has to mark them down twice
before buying one. I don't have a recipe for one but if I were going
to make one I would first find a good butter cake recipe. After
baking the cake I would brush it with bourbon. I can't remember if
the topping is just chocolate and nuts or if it's more like a praline
topping with a flavor similar to that of Derby pie.

Wish I had Krogers, period... but not paying that price either... Merts
has just let the whole thing go to their head on the price.

Well Mert's is the bakery and the cake is Louies Derby Cake.

You could add the bourbon directly into the cake batter. The alcohol
will cook off but the flavor would be there. OR you could
pour a little bourbon over the cake as soon as it comes out of the
oven.....like a rum cake. and YES, you could put it in the ganache
too!!
