Believe it or not, most of the country doesn't care a whit about Derby
Day.
I see someone got up on the wrong side of the bed! If you don't care
about Derby Day, why bother posting to this thread? Have you been taking

Regarding the Merts recipe for Louie's Derby Cake, the actual recipe is
a secret, but it's described as a "fusion of moist butter praline cake,
dark chocolate and fine Kentucky bourbon". The picture on mertscakes.com
shows that it may be a four-layer bourbon-soaked pecan praline cake with
chocolate ganache filling between the layers and what looks like thin
royal icing.
So I'd start out by making two thick layers of praline cake[1]. Cut each
layer in half crosswise to make four layers. Using a pastry brush, put
bourbon over each of the cut sides. Make ganache and assemble cake
layers with ganache between the layers. Make thin white frosting and
cover cake with it.
