shelly beans (they weren't fully dried down before they
were removed from the pods and then cooked - more tender
than using dried beans) as they do cook quicker it is
easy to overcook them by mistake but we still eat them
and enjoy them anyways.

for last night's dinner i had some of those beans and
then nuked them with some bacon bits until they were hot
and added yellow mustard and some onion salad dressing.
plenty of green and red pepper chunks (raw) then went
on top as i wrapped the beans in a flour tortilla that
had ground up spinach in it so it was green. nuked for
a minute to get the wrapper softened up more and the
beans and other ingredients back to hot. i could not
really taste that spinach much at all but it was a bit
different. that's ok. i still ate it and it was good.

simple and filling. :)

oh and in other cooking related news i was gifted with
a knife sharpening stone and a steel to use from a friend
as they were his father's but he was not planning on doing
that much cooking any more. i told him i'd think of him
and his father each time i used them. i really needed a
sharpening stone and a steel so they are both things i
will use. i already used the steel, but i'd not needed to
use the grinding stone in that i had already gotten so
disgusted by the knife being nicked and dull that i got
out the Dremel tool instead and ground the blade down to
being useful again (nicks really make an edge a pain in
the butt to use and appreciate) so i didn't need to use
the grinding stone for that. having then used the knife
some time later to cut up a tomato and it was so sweet to
finally have a knife that would cut the tomato instead of
compressing it to a mush and i cut up some other things
and was happy... it's not really too hard to make me
happy when something actually works as it should.

also got some heat resistant large oven gloves. i've
wanted some of those for canning and baking (if i ever do
much baking again). Mom won't use them, she likes being
burned i guess. i have a few scars on the backs of my
hands from being burned and all the hot pads we have are
not very thick so carrying a hot quart jar or two quart
jars can be a challenge to not getting too hot on the
hands. the gloves will help. reaching into the hot
oven to load and remove jars will be much easier and
safer. :)

Mom did some baking of bread and nut breads with
cranberries the other day. all good.

veggie pizza and a pumpkin cheesecake pie were on the
menu for the weekend.

i've been mostly doing impromptu meals for myself with
sardines a few times a week and other stuff of no real
challenge or time involvement. i even made some oatmeal
for the first time in many months the other day - it
boiled over as i'd forgotten the exact timing i needed
for the first cooking stage (where i get the oats and
water up to boiling temperature) so i need to stand
there the next time and get that figured out again. i
used to make oatmeal almost every day so i assumed i
knew what i was doing. senility is creeping in around
the edges!

for a once in a while treat i like some hot water with
a bit of brown sugar and vanilla in it. i tried to get
some good vanilla but it turned out to be just your
average vanilla with a slight bump in complexity to it
but the price was good and i'm ok with using the cheap
stuff for things like this. i haven't been drinking as
much coffee or hot chocolate (a lot more sugar in those
that i like and also the caffiene i don't need) and
after many years we finally used up the fake coffee
substitute i had on hand for the times i did want some
coffee flavored something. for the price and shelf-
space in the cupboard i'm happy to have it gone and
no plans on getting another jar. it did taste ok and
was good i just don't need it and can get by with the
instant coffee once in a great while if i do want some
or to use the instant coffee in the pumpernickel bread
i haven't made in many years. so there's no worry at
all there...

outside there are plenty of gardens i still have to
get put up for w*nt*r. busy with a lot of beans that
have to be shelled and sorted and pictures taken. i'm
not doing too much of it with the weather being nice
enough to be outside more than usual. rains this past
weekend were really needed - the ground was getting
pretty hard - i had to jump up in the air to get the
shovel to even make a mark in the soil let alone to
go in to where i could scoop the chunks out. only
got half way through the tomato garden trench before
i quit for that day. next half will get done some
day soon but my body might need a bit more recovery
before i do that. busiest time of the year and the
weather cooling off means i can get a lot more done
and also get some projects done that were waiting for
such a time.

Do you folks make the onion dressing? I've been looking at some

of some that combined Buttermilk and sour cream plus onions sweatted
down in a steamer.

no, this was Ken's Steakhouse Sweet Vidalia Onion
dressing. loaded with sugar. i just used it up as we'd
had that jar in the fridge for a long time and Mom wasn't
using it.

Our of a can is why I despised spinach for years until I had some fresh.
Also good lightly sauteed with garlic.

 Also good lightly sauteed with garlic.
Canned spinach is truly awful. Fresh spinach, quickly sauteed with
garlic in a little olive oil is wonderful. If you don't have fresh
spinach, frozen is the next best thing. I also recall going to a
restaurant once where they served a broiled boneless chicken breast half
on very quickly deep fried whole spinach leaves. The deep fried spinach
tasted better than the chicken. :)

garlic in a little olive oil is wonderful. If you don't have fresh
spinach, frozen is the next best thing.
Frozen vegetables are often "fresher" than fresh supermarket
vegetables.

in childhood.

Yes, fresh deep fried leaves of spinach. It sounded odd to me, too, but
it was delicious! Only takes about 2-3 seconds in hot oil; quickly
fried, drained and used as a bed for the broiled chicken. This was at a
chain restaurant called O'Charley's with headquarters based out of
Nashville. This was in the late 1980's, early 1990's.

I remember Sheldon talking about canned spinach and refusing to believe
me when I said that it is not sold here. I occasionally look out of
curiosity but I still haven't seen it.

My guilty secret, I even like it canned, cold, eaten with a salt
shaker! (good for me as I have salt problems so need to eat more than
most.
