It may siund strang but I've never done a potato casserole. I went
very mundane for my first trial.

14oz (or so) defrosted Hash Browns (about 3cups)
1 can cream of mushroom soup
2 cups shredded pepper jack and cheddar cheese
2 bratwurst, peeled of casing and turned to little sausages on the top
topped with French Fried Onions (dry from a can)
-laced with 1/2 tsp whisky smoked black pepper and black river creole
spice blend.

Mixt potatoes, soup, and spices well then top with the onions. Bake
covered at 350F for 50 minutes then uncover for 6-10 minutes to crisp.

The original doesn't add the spices but we liked it and it was still
pretty mild.

Any others have other ideas?

can be eaten as a breakfast or dinner casserole. I've
also done one with some softened onions and a mixture
of chopped three-pepper mix to the potatoes. I tend to
add softened onions whatever hashbrown casserole I'm
making.

would work? I considered it but they were frozen and I didn't want to
defrost them.

'chopped 3 pepper mix'? I think of 3 colors of bell peppers but not
sure what you mean?

Yes, the caramelized onions would work well. But it only takes
maybe 5-7 minutes to soften raw onions in a skillet with a bit
of butter.

Yes, it's chopped yellow, red, and green peppers also softened
like the onions. You could just soften all together at once.

Ok! I make caramelized onions by the lb and freeze them in 1/2cup
baggies. Looks like a good add-on!

of it as something that is supposed to be spicy. The last time I made
it I used a can of cream of chicken soup diluted with a can of milk,
crumbled breakfast sausage and lots of shredded cheddar cheese. No
particular spice blend. Topped with crushed cornflake crumbs and baked
until the top is crispy.

I don't "stock" cornflake crumbs either, but if you ever do decide to
use them don't buy crushed cornflake crumbs. The price is insane. Just
buy a box of cornflakes cereal and crush some.

I remeber about the crushing from an earlier thread about 5-6 months
ago?

I generate a lot of crumbs/croutons here so no need for that here. In
fact I just sent a cleaned out classico jar full to a neighbor.

That looks perfect for a crisp fall dinner. I imagine it would go just
as well with tater tots.
