Fried Green Tomatoes -- Best tomato to use?

I am about to purchae some tomatoes for my garden and I really love
them fried green. (However, I can never make them as well as my
mother.) Actually I suppose I should say I like Fried Green tomato
hash. She made them chunked and battered and kept turning them in the
frying pan till they reduced a lot. It turns out that the come out
looking like a Tomato hash or something.

Anyway, I am wondering what type of tomato wourks best for green
frying. I have tried Cherokee Purple, Big Boy, Mr. Stripey, and a
couple others.

Any input would be appreciated.

Fried green tomatoes refers to frying unripe tomatoes. Most any
mature but not ripe tomato works fine.

Here is the recipe I posted in 1999.

Fried Green Tomatoes
Fanny Flagg in "Fried Green Tomatoes at the Whistle Stop Cafe"

1 medium green tomato (per person)
Salt
Pepper
White cornmeal
Bacon Drippings

Slice tomatoes about 1/4 inch thick, season with salt and pepper and
then coat both sides with cornmeal. In a large skillet, heat enough
bacon drippings to coat the bottom of the pan and fry tomatoes until
lightly browned on both sides.
