I can attest, those chewy oatmeal raisin cookies are delicious! I do
have to say I can't imagine bothering to weigh all the dry ingredients
on a scale to bake a batch of cookies. Never had a cookie failure by
simply following the directions that said "1-1/2 c. AP flour, leveled".
But some people like Graham are very exact in their baking. To me,
they're just very tasty oatmeal raisin cookies. :)

Dementia Joe: 37 million votes Trump won 49 States, the dementia
patient won New York. The voting machines were so overwhelmed by the

Not that I disagree about the ease of weighing, but putting
measuring cups in the dishwasher isn't a lot of work.

I'm always a little paranoid about weighing liquids in cases
where I can't remove some if I overpour.

trying to make Coccodrillo for the first time. This is an Italian
bread with a 110% hydration. The recipe used weights for the flour
but cups for the liquids. However, I used a Canadian 250ml cup but
the recipe was in an American book using a 236ml cup. You might think
that 14ml shouldn't make that much difference but it did and I had to
discard the slop.

I have both a kitchen scale and a sifting attachment for a kitchen-aid
mixer with a digital scale, but I hardly use them. Old habits die hard,
and most of my recipes are in regular cup measure. Some recipes like
biscuits, I don't even measure, I eyeball everything.

This is a bread that stretches your bread-making skills to the limit, it
has a hydration of 110% in contrast to 60-65% for normal breads

Cocodrillo

Direct method, lean rustic dough, commercial yeast. Days to make: 1.

Yield 4 small-medium loaves.

500 gm white BREAD flour.
550 gm warm (30C) water
1 1/2 tsp instant yeast
10 gm salt

Mix until roughly combined, with the paddle, and rest for 10 min or so.
Still with the paddle, beat the hell out of the glop on medium-high
until the dough is slapping around the bowl and clearing the
bottom completely. This will take about 25 - 30 min and nothing much
will happen for at least 15-20. You may have to stop the mixer
occasionally to let it cool down!

Tip the dough (glop) into an oiled bowl or similar, I use a cylindrical,
transparent, polyethylene food container with a tight sealing lid which
makes it very easy to see the progress of the rise, and leave, tightly
covered, to triple. It MUST triple or this recipe will not work!

Pour onto a well floured surface, shake more flour over, divide into 4
rough squares and plump, them up by sliding an angled bench knife under
the dough. Shake flour, generously over the loaves and their
surroundings and leave until extremely puffy and wobbly, about 45
minutes - just about right for heating the oven to flat out max with a
pizza stone or tiles. Take no prisoners.

Using a floured bench knife free each loaf from the counter and,
gently, flip it over, pick it up, using floured hands and, gently,
stretch it to about 10" long and onto a peel, Superpeel or parchment.
The dough very nearly stretches under its own weight. You must move
quickly. It will look as if you've totally and permanently deflated the
bread. Trust me but I've actually done this stretch 'n' bake several
times and it always works. Straight into the raging oven, down to 220C
after 10 min, bake to internal temp at least 96C and you can go as high
as 98C if the crust doesn't brown too quickly. You will not believe the
oven spring. I bake the bread in 2 batches. The bread will pass the
"thump the botttom" test long before the bread is cooked - You Have Been
Warned!

Hat's off to the Master! I tried to tell 'D' that you were better but
he didn't believe me.

I have pushed higher hydrations with a bread machine but no place close
to yours. It's the set timeframes that cause the problem. Ah well,

But some people like Graham are very exact in their baking. To me,
they're just very tasty oatmeal raisin cookies. :)
There certainly are pastries that require a high level of precision.
Oatmeal cookies aren't among them, though. Since Graham is more
comfortable weighing ingredients, it's only natural that he would
convert the units.

An Earthquake’ Along the Border: Trump Flipped Hispanic South Texas

Donald J. Trump’s biggest gains anywhere were along the Texas border, a
Democratic stronghold where most voters are Hispanic. He won 12 of the
region’s 14 counties, up from five in 2016.

"Nowhere in the United States have historically Democratic counties
shifted so far and so fast in the direction of former President Donald
J. Trump as they have in the Texas communities along the Rio Grande,
where Hispanic residents make up an overwhelming majority...

In recent elections, the region’s mix of sprawling urban centers and
rural ranch lands that had been reliable Democratic strongholds for
generations were beginning to turn red...

Then on Tuesday, Mr. Trump brought South Texas and the border region
firmly into his column, taking 12 of the 14 counties along the border
with Mexico, and making significant inroads even in El Paso, the
border’s biggest city. In 2016, Mr. Trump carried only five of the
counties...

One of the biggest swings came in Starr County, a rural area of 65,000
people dotted with small towns where sections of border wall have been
rising, incomes are low and many travel long distances to jobs in the
West Texas oil fields. The county flipped Republican on Tuesday, backing
Mr. Trump by about 16 percentage points. He lost the county to Hillary
Clinton by 60 points in 2016...

On a sweltering Thursday in the border city of Roma, voters who
supported Trump said they had done so mostly for practical reasons, and
out of a concern over uncontrolled immigration...

Fabiola Rodriguez, 28, a single mother of two children, said just going
to the grocery store had become a painful experience. When Mr. Trump was
president, she said, she was able to fill her shopping cart for about
$250. Now, she spends $300 for a cart that is less than half full...

“I don’t take my children to the grocery store because I know I won’t be
able to afford what they want,” she said.

She also feared that Vice President Kamala Harris would be unfriendly to
the oil and gas industry, which draws many workers from places like
Roma. She blamed the Biden administration’s policies in support of
renewable energy for cuts to her father’s and her brother’s working
hours in the oil fields..."

Is the fact that Trump got more support amongst Hispanics and blacks not
simply because they are afraid they will lose their jobs to cheaper
immigrant labour...???

Is the fact that illegal immigrants were 'exported' to New York, and
Trump's subsequent good showing in New York, not related...???

Methinks the Democrats were a bit stupid to think that their working
class supporters will keep on voting for them if they were at risk of
losing their jobs...

This is corporate culture lived large.

They have us training our replacements and it ain't just for slave
labor, oh no...this is a whole re-coloring of America with the darker
pigmented races being the new favored breeding pools.

In some respects this makes good sense as they have shown a capacity to
create large extended families, more so than black America with its
absentee daddy syndrome, and more willingly white America's "no more
than two" defacto replication setting...

China is down this road too, but they still seem to think they can age
their way our of it, we shall see...
