In the end, it was pumpkin & carrot soup. The wife improvises it, so have
no recipe, but it contained pumpkin, carrots, onions, zuchini, chicken
broth, coconut milk and bacon. Probably missed a thing or two, but it's
excellent!

slightly whizzed in processor. apply to salmon; bake".
I've tried whizzing it, but we like it better with identifiable bits.
I use butter and/or walnut oil to saute thinly sliced shallots, then add
sliced mushrooms, followed by roughly chopped walnuts.

Next, I season the salmon portions (usually with a lemon pepper
mix),sear them, again using butter/walnut oil, turn them, then add the
topping to that pan with a little single cream or half-and-half, and
cover the pan to finish cooking. I often top it with fresh snipped
parsley when serving.

I usually prepare rice to go with the salmon - half black rice, half
brown basmati, with multi-colour carrots and sugar snap peas. The
combination looks very pretty on the plate.

But I was lazy and jet-lagged, so just did potato and peas this time.

We had a Porterhouse steak with Brussels spouts, salad with blue
cheese dressing and leftover mashed potatoes that had been reheated
in a pan with lots of melted butter.
We had a very odd dish we make randomly. I call it 'ugly chicken' as
it's not a pretty dish but it's extremely good. It's also very simple.
It's a relative of adobo but more a European relative of it. Critical
is no vinegar.

This time:
2 frozen chicken leg quarters, skin on and bones in,
1 gallon (or a bit more) water
3 TB Goya brand Adobo seasoning
optional: sayzon Abobo seasoning, about 1 TB

Basically medium boil until it's falling off the bone.

Grin, I put mine after fingering out all the bones, on fresh bread with
mayo. Don pulled a lot of the boiling juice with some meat to a soup
bowl then used a hunk of bread (one of the bunnies ears) as a dipping
bread. We had tater tots with it all.

Sorry, no picture. Ugly chicken is well named (grin).

Sometimes leftover soup is better than it was to start with. Especially
with hot buttered cornbread.
My post should have read I made that pot LAST night. Yes,
I think it's even better today than last night. The liquid
portion was a tad thin, but I had added two rounded tablespoons
of pearl barley. That smidge of starch thickened it a smidge.
A quick 'n easy thickener is also a bit of instant mashed pertater mix,
I always have a pouch or two on hand...

Japanese mayo. You know, the usual.
The Japanese mayo was made in the US, not Japan. It tasted a little
funny, with a rancid soybean oil taste. After tasting it, I used half
Best Foods instead. My Japanese potato salad is an awesome potato salad
