Creole Brains with Noodle
1 pound brain
1 quart wate
1 tablespoon vinega
1 teaspoon sal
2 tablespoons butter o
margarin
3 tablespoons sliced green onion
1 tablespoon flou
1 can (8 ounces) tomat
sauc
1/4 cup wate
3/4 teaspoon sal
1/8 teaspoon peppe
1 tablespoon chopped parsle
4 ounces noodles, cooke
Wash brains and remove membrane. Simmer brains 20 minutes in water t
which vinegar and 1 teaspoon salt have been added
Drain, separate into pieces. Melt butter or margarine. Cook onions i
butter or margarine about 3 minutes. Stir in flour. Add tomato sauce
water, 3/4 teaspoon salt and pepper. Cook, stirring constantly, unti
thickened.
Add brains and parsley and heat thoroughly.
Serve on hot noodles. 4 to 5 servings
