A friend of mine made these and they taste great!

Pecan Pie Muffins

Ingredients
1 c. packed light brown sugar
3/4 c. all-purpose flour
1 c. chopped pecans
2/3 c. butter, softened (5.5 oz)
2 large eggs


Grease muffin baking tins or line with paper liners. In a mixing bowl,
combine brown sugar, flour and pecans.

In another bowl, beat the softened butter and eggs until smooth. Combine
both mixtures and stir until blended.

Pour the dough into the molds, 3/4 full. Bake in an oven preheated to
350F for 20-25 minutes.

I'm surprised there's no leavening.

Ah, here's the reason:

Pecan Pie Muffins are a mix between a pie and a muffin. They have a
muffin texture with a soft gooey inside like a mini Southern pecan pie.

Most of the recipes I've found have 1/2 cup flour rather than
3/4. I imagine these are a little more muffin-like.

My granddaughter is going to her grammie's house to do some baking. Her
grammie has a small business selling baked goods. I baked some for her
to try. I used some baking powder in the mix - also some vanilla. You
gotta use vanilla in pecan pie.

actually a tree farm (Palms on the Parkway) but they also sell fresh
shelled pecans.

the fantastic results your Majesty clearly obtained. You need to tell
them, otherwise they may be disappointed in your highness' royal recipe.
