I don't want to start the great fruit cake love it or hate it debate all
over again. I just want to say that I just put the first batch of my
light fruit cake into the oven. It is a lot of work and lot of expense
but I have several friends and relatives who look forward to it every
year. It took me an hour to get the ingredients whipped up and ready to
go into the pans. Stirring the dredged glazed fruits into that heavy
batter is a decent workout.

Is the batter too heavy to mix in a nice stand mixer? I hated making
whipped cream and icings before I was gifted a new Kitchen-aid mixer.

I was more concerned about the amount of batter. It is very heavy
batter. For the first batch I had set aside a cup of flour for dredging
the fruit but based on the amount that was loose in the bowl I figured a
half cup would do the job for the second batch. The stand mix handled
the dough okay and I added the fruit in stages to make sure it didn't
get thrown out. I figure I saved at least 10 minutes of that really
hard stirring and mixing.
The second batch is in the oven now.
