Whatcha' eating tonight for dinner?

I haven't a clue what supper will be here, maybe a can
of drained tuna and saltines. But at the moment there
is a peach cobbler in the oven and DAMN the house smells
fantastic!!

My mother always made hers with plain white sugar, but
I decided to try something just a bit different. I used
brown sugar in the slurry; report later how it turned out.

We had a couple of boneless chicken breasts my wife had taken out of the
freezer too late. I was able to break then apart and then cut them up
into small pieces to thaw quicker and used in a stir fry that my wife
offered to do. She faked something with red and yellow peppers, a hot
pepper, some onion and snow peas. She made a sauce by adding some corn
starch to a cup of chicken broth and some soy sauce. She added a little
sesame oil before adding the slurry. It was great.

Peach cobbler turned out great! I thought some vanilla
ice cream would be a nice finishing touch, but no, it was
lip smacking without it.

Whipped cream should always have vanilla, unless it has Chambord
instead. ;-)

My sister-in-law will make whipped cream with vanilla, but
my brother nor I like it. She uses far too much vanilla
and it comes across as whipped gasoline. I ate my peach
cobbler with no adornment, ice cream would just be gilding
the lily. But admit if any had been in the freezer I'd
probably had a scoop on top.

Whipped cream is good with a little vanilla, but it has to be a really
small amount. IMO, no more than a few drops. My wife has been known to
overdo the vanilla and it goes from nice to pretty bad. A little rum or
brandy can be nice in it.

This is the truth! One needs to be careful with the vanilla. It should be
a light accent, not take over the show.
